#HeinensSundaySupper Week Two: slow cooker hot Italian sausage, peppers & onions

My yoga teaching schedule recently changed to include a return to teaching regularly on Saturday mornings (I missed it so!), leaving me with a free day on Sundays. But of course as it is when it comes to teaching, I take every opportunity I can, and was lucky to sub a class this past Sunday morning.

Once Hans and I got home from the studio around noon, I had every intention to throw in the ingredients I purchased at Heinen’s for a solid slow cooker meal: hot Italian sausage, green peppers, white onion, garlic, and a jar or so of their brand’s marinara sauce plus a few extra tomatoes to beef things up.

…but first I made myself lunch. (Teaching makes me hungry!) Then I started vacuuming. Then I caught up on some emails. And then I got sucked into another episode of The Voice. And started talking to the dog… when Grady reminded me that it was already 3:00PM and I still hadn’t started the slow cooker.

Knowing we were shooting for a 6:30ish dinner (and I was trying to fit in a yoga practice for myself that afternoon), I sliced, diced and placed everything into my slow cooker by 3:15PM. But would just over three hours be enough time to get everything married together? I told my brother we’d be ready to eat at 6:30PM…

Turns out it was. Plus I was running a few minutes behind post-practice, so it bought me a few more moments to let the slow cooker do its job. I prepped the pasta for Hans and my brother and the (already pre-cooked) spaghetti squash for me, and before we knew it, dinner was on the table before 7.

LONG STORY SHORT: There’s no need to overthink your dinner plans, and no need to fret when you’re a bit behind your Sunday schedule. Even in a pinch, I was able to throw together a meal that will surprised all three of us. Considering Hans picked out the protein, I knew he would enjoy – but I had NO idea that Drew liked this meal so much. For my brother to go back for seconds – now that’s when you know it’s a winner!
